The Official Expanded Universe is all the media related to Neon Genesis Evangelion outside of the original series and the first two movies (Evangelion: Death and Rebirth and The End of Evangelion) that its production company, Gainax, deems official. They are not necessarily canonical with respect to the original story, since for example, Girlfriend of Steel 2 occurs in an alternate universe, and many of the games don't expand on the original story at all.

Evangelion: Death & Rebirth theatrical pamphlet

The Evangelion: Death & Rebirth theatrical pamphlet was a limited edition supplementary booklet distributed in Japanese theaters during Evangelion: Death & Rebirth's initial run.

End of Evangelion theatrical pamphlet

The End of Evangelion theatrical pamphlet (nicknamed the "Red Cross Book" by overseas fans) was a limited edition supplementary booklet distributed in Japanese theaters during The End of Evangelion's initial run. The contents of the book described many areas of the Evangelion storyline that the series left unclear. It is GAINAX-sanctioned, but contains many inconsistancies when compared with the events of the anime. As such, it is debated whether the booklet is canon or not.

Der Mond and Die Sterne

Artbooks published by Gainax through Kadokawa Shoten. Includes various artworks, although few are cells from the original animation. Die Sterne includes a section of art by Yoshiyuki Sadamoto, the artist of the manga and character designer of the animated series and movies.

Girlfriend of Steel

Iron Maiden

This is a game released by Gainax as an extra 'episode' in the series, positing a further development along the lines of a set of manned Jet Alone robots. It focuses mainly on Shinji and Mana.

Girlfriend of Steel 2

Iron Maiden the 2nd

This is a game released by Gainax based on the 'normal life' section of the dreams of Shinji Ikari in the final episode of NGE.

Evangelion 1st Impression

A Sega Saturn game that is scripted like an episode, where Shinji is injured in combat, and has amnesia. It features RPG elements and FMV combat.

Evangelion 2nd Impression

A Sega Saturn game that focuses mainly on Shinji and Mayumi. It features RPG style gaming, and combat, and is structured like an episode.

Evangelion 64

A game for the Nintendo 64 covering the entire span of the TV series and movies as a combat and RPG game.

Evangelion 2

ShinSeiki Evangelion 2 新世紀エヴァンゲリオン2 (Neon Genesis Evangelion 2)

A Bandai/Alfa System game for PlayStation 2 based on the entire run of the TV series and movies, featuring RPG style story interaction and combat. It includes things such as F-Type equipment and a new revision of the Jet Alone project.

This game is similar in style to the Princess Maker game series. In the game, it is your task to look after Rei or Asuka. Your decisions affect their personality and development thus affecting the story of Evangelion and even changing the conclusion.

Shinji Ikari Raising Project

Ikari Shinji Ikusei Keikaku 碇シンジ育成計画 Another "raising" game. the player assumes control of Shinji Ikari, the hero and main character of the normal Neon Genesis Evangelion series, in the expanded alternate universe that was glimpsed upon for a few moments in the TV episode 26. Basically, the player decides Shinji's fate in how he lives his life. Different decisions and actions lead to various outcomes etc.
