Edomae sushi
The following types of sushi consist of an oval-shaped ball of rice and a slice of the named item as a topping:
- aji (鯵)-- horse mackerel
- akagai (赤貝)-- ark shell
- ama-ebi (甘海老)-- raw pink shrimp Pandalus borealis
- aka-yagara--cornetfish
- anago (穴子)-- conger eel
- aoyagi (青柳)-- round clam
- awabi (鮑)-- abalone
- ayu (鮎)-- sweetfish
- buri (鰤)-- adult yellowtail
- chuutoro (中トロ)-- marbled tuna belly
- ebi (海老)-- boiled shrimp
- gindara -- black cod
- hamachi (ハマチ)-- young yellowtail
- hamaguri (蛤)-- clam

Gunkan-maki
The following types of sushi consist of a ball of rice used as base and a sheet of nori to hold a loose topping like fish eggs or non-solid ingredients together:
- ikura -- salmon roe
- kazunoko -- herring roe
- tobiko -- flyingfish roe
- uni -- sea urchin roe

Maki Sushi
The following types of sushi consist of rice and other ingredients, usually fish, rolled together with a small sheet of nori:
These are four types of maki sushi:
- chu maki -- middle sized rolled maki sushi with two or more ingredients
- futo maki -- thick rolled maki sushi with several ingredients
- hoso maki -- thinly rolled maki sushi with typically only one ingredient
- temaki (sushi) -- cone shaped maki sushi
The following are sushi which are rolled, usually in nori:
- avocado
- california roll (Japanese: カリフォルニア巻き) -- crab, avocado, and cucumber (not usually available in Japan)
- carrot -- finely chopped
- kappa -- cucumber, named after the water spirit that loves cucumber.
- natto -- fermented soybeans
- oshinko -- takuan (pickled daikon or other pickled vegetable
- tamago -- sweet flavored omelette
- tekka -- maguro tuna
- ume -- paste of ume
- wasabi -- paste of wasabi
Vegetarian makizushi such as avocado, carrot, pickled daikon and kappamaki are sometimes served using brown sushi rice as an alternative sushi rice.
