Pontefract Cakes
From Free net encyclopedia
Pontefract Cakes (also Pomfret Cakes and Pomfrey Cakes) are a type of sweet, made of liquorice, originally made in the Yorkshire town of Pontefract.
Traditionally, there is no such thing called a Pontefract Cake. The original name for these small tablets of liquorice is a "Pomfret" cake. The word Pomfret is the Norman name for Pontefract. The liqourice root used in these cakes was exported to Australia for the first time by a member of the famous Carter family who hailed from Pontefract.
