Spring Valley is a city located in Fillmore County, Minnesota. As of the 2000 census, the city had a total population of 2,518.

Demographics
As of the census2 of 2000, there were 2,518 people, 1,026 households, and 662 families residing in the city. The population density was 387.3/km² (1,003.3/mi²). There were 1,090 housing units at an average density of 167.7/km² (434.3/mi²). The racial makeup of the city was 98.93% White, 0.08% African American, 0.24% Native American, 0.08% Asian, 0.00% Pacific Islander, 0.04% from other races, and 0.64% from two or more races. 0.44% of the population were Hispanic or Latino of any race.
There were 1,026 households out of which 32.4% had children under the age of 18 living with them, 51.3% were married couples living together, 10.0% had a female householder with no husband present, and 35.4% were non-families. 30.1% of all households were made up of individuals and 14.7% had someone living alone who was 65 years of age or older. The average household size was 2.40 and the average family size was 3.00.
In the city the population was spread out with 26.1% under the age of 18, 8.3% from 18 to 24, 25.9% from 25 to 44, 20.4% from 45 to 64, and 19.4% who were 65 years of age or older. The median age was 38 years. For every 100 females there were 89.9 males. For every 100 females age 18 and over, there were 87.1 males.
The median income for a household in the city was $32,688, and the median income for a family was $42,468. Males had a median income of $28,438 versus $22,225 for females.
